Overview 
We’re looking for an experienced Sous Chef to join the kitchen team at a stunning hotel. You’ll support the Head Chef in delivering high-quality breakfast, banquet and event service, lead the team during busy periods, and help maintain exceptional food quality and hygiene standards. This is a hands-on role offering the opportunity to work in a fast-paced environment with a supportive team and excellent career development opportunities.

Role & Responsibilities

  • Support the Head Chef in leading the kitchen, taking full responsibility in their absence.
  • Oversee the preparation and delivery of banquet, event, and breakfast service to consistently high standards.
  • Lead and motivate the kitchen team, ensuring efficient service during busy periods.
  • Train, mentor, and develop new and existing team members across all kitchen sections.
  • Work confidently across every kitchen station, providing hands-on support where required.
  • Manage stock control, stock takes, ordering, and minimise waste to maintain food cost targets.
  • Create and manage staff rotas to ensure appropriate kitchen cover and operational efficiency.
  • Ensure full compliance with food safety, hygiene, and allergen regulations at all times.

Candidate Requirements 

  • Previous experience working as a Sous Chef in a busy hotel or high-volume hospitality environment
  • Strong leadership skills with the ability to motivate and support a kitchen team
  • Proven ability to work in a fast-paced environment while maintaining high standards
  • Good understanding of stock control, stock takes and food cost management
  • Experience training and mentoring junior chefs and kitchen staff
  • Knowledge of food safety, hygiene and allergen regulations
  • Experience working with a range of cuisines and catering for events
  • Positive, hands-on approach with the confidence to lead the kitchen in the Head Chef’s absence
