For us at JIC, the summer season always seems to bring back memories of eating spoonfuls of creamy and delicious ice cream and biting into a crunchy cone! Ice cream is an incredibly popular treat for families and children. And while supermarkets sell tubs of ice cream, there is nothing better than making and sampling your own homemade treats!
Gemma Staford, a professionally-trained chef and baker, has created an easy two-ingredient ice cream recipe that can produce more than 50 varieties of flavours. Her method does not require an ice cream making machine, and the recipe makes it the perfect opportunity for nannies to introduce young children to the kitchen.

What ingredients do I need?
This easy, homemade ice cream recipe requires two ingredients you can easily find in your local supermarket: heavy whipping cream (double cream in the UK) and sweetened condensed milk. The recipe requires fresh dairy cream that has been skimmed from full-fat cow milk. Milk cannot replace the heavy cream that is essential in this recipe.
The condensed milk acts as the sweetener and helps soften the ice cream. Caregivers who prefer to tone down the sweetness of the treat can use low-fat or fat-free condensed milk instead.
How do you make the ice cream?
To make the base of this two-ingredient, 50-flavour (!) homemade ice cream, nannies should whip up the heavy cream until it forms soft peaks, usually about two to three minutes. The whipping cream should be cold. Once whipped, add in the condensed milk.
When both ingredients are mixed well, add in a few drops of vanilla extract. This ingredient helps to keep the ice cream soft and scoopable after it freezes. Whip for another two to three minutes or until the mixture forms stiff peaks. Stick it in the freezer for a minimum for 6 hours!
Tip: Both ingredients should be very cold before combining them. This ensures they come together perfectly.
How do you make different classic flavours?
Using the vanilla-flavoured based, you can make dozens of different flavours. Nannies and their young kids can create classic flavours such as strawberry or cookies & cream, or make unconventional ingredients such as trail mix and goat cheese.
Strawberry Cheesecake Ice Cream: Mix in a cup of cheesecake for every two cups of the ice cream base to give it that sweet-and-tart flavour. While strawberry puree is recommended, fresh strawberries can also give the ice cream a slightly sour taste.
Cookies & Cream Ice Cream: Mix two-third cup crushed Oreo cookies for every two cups of the vanilla-flavour base. Kids who enjoy the combination of cookies and strawberries can also use Oreo’s strawberry-flavoured cookie. Add more crushed cookies on top of every scoop for a stronger flavour and a different texture.
Mango Ice Cream: Pour a quarter cup mango puree or fresh mangoes into two cups of the ice cream base. For more flavour and a different texture, top your scoops with crushed graham crackers.

How do you make unconventional ice cream flavours?

Red, White, and Blueberry Ice Cream: Add a cup of chopped strawberries, 3/4 of a cup of blueberries, and a cup of marshmallows into a quart of the vanilla base.
Cereal & Milk Ice Cream: Crush 1 ¼ cups Fruit Loops (or any cereal you prefer) into small crumbs. Stir the cereal into a quart of vanilla ice cream.
Ginger & Pineapple Ice Cream: Mix three-quarter cup drained and crushed pineapple and one tablespoon fresh grated ginger into a quart of vanilla ice cream.
